Not an Option
Again, because this is low-residency, we don't have/use a dining hall. We do have some dinners and snacks provided, and while it runs the gamut and even includes vegan food (which is crucial for me as a vegan), eating well while I'm at school is a bit challenging. I end up staying in an extended-stay hotel and doing a bit of my own cooking, which makes long days of seminars and workshops a bit troublesome at times. The two delis on, or very close, to campus are not vegan-friendly and are more expensive than buying stuff at Sprouts and making my own sandwiches or whatever at the hotel.
I cannot speak about the dining experience of undergrad students. It may be different.
