My friend's friend just visited and was on a gluten free diet. She seemed to do well at the dining hall. She did eat A LOT of meat...
My other friend is lactose-intollerant, vegetarian/mostly vegan and allergic to most nuts and she somehow manages. It seems impossible, but she somehow manages and seems pretty content with the options.
I'm also vegetarian.

Earlham’s dining hall, SAGA, may be all-you-can-eat, but good luck getting your money’s worth. As a freshman, you will be required to purchase a 19-meal-per-week plan, which you can only use at SAGA or for meal exchange at the Coffee Shop on weeknights. The salad bar, complete with baby spinach, fresh veggies, feta cheese, oil and balsamic vinegar, provides all the necessary ingredients for a snazzy and satisfying semi-gourmet meal. Most mornings, you can order eggs to be cooked as you like, and at lunch and dinnertime, toasters, microwaves, and two frying pans can help you get creative with a classy grilled cheese or stir-fry with rice. If you miss home cooking, fill up a to-go box with some raw ingredients to make a meal in your dorm kitchen. SAGA food isn’t bad at first, but it gets redundant after a while. Fortunately, as you move up in the world, you can drop your meal plan altogether (if you’re not still living in a dorm). This is especially useful if you are interested in joining the Co-op meal plan, which provides delicious and healthy lunches five days a week. All in all, semi-greasy SAGA food will get you through your first year and give you time to decide for yourself how you want to eat for the next three years. Even if you don’t cook, delicious treats are there if you know where to look for them. Don’t miss out on a free gourmet meal on Farm Days (every Saturday at Miller Farm) or at Sabbat dinner in the JCC on Friday nights.
