You can't be serious...
Ive been there twice as a visitor and my class ate in the Fountain dining hall both times, and the food was great :/ I liked it. Maybe it's because we weren't there on it's off days
I do not agree with most of these claims! At least half of the dining options at the main dining halls are catered to vegan and vegetarian. The food is mostly solid at Fountain, and I suppose that you don't eat at Case Athletic dining hall, which NC State actually allows students to eat at. The meal plan is reasonable in relation to comparable Universities, and State is one of the few campuses to allow an equivalency program integrated within the meal plan to purchase food at Campus venues (The Atrium, Taco Bell, Chick-Fil-A, Port City Java)!
I suppose that you also are not considering the multi-million dollar renovation of Talley Student Center with the addition of 9 new food venues- Starbucks, Jason's Deli (the first on campus location), One Earth World Cuisine, a New York Pizza among others). Fountain is certainly not the best, but Clark and Case with the other venues are solid!
I'm surprised you feel this way because I decided to become a vegetarian while a student here specifically because the campus offers so many options for vegetarians. In fact, when I'm off campus I have much more difficulty consistently finding safe vegetarian options. In a sense, I really only feel safe as a vegetarian when I am on campus.
Also, I'm questioning your credibility here because I eat at the dining halls very often and the main dining halls (Clark and Fountain) ALWAYS serve AT LEAST ONE entirely vegan entree per meal. Nobody is forcing vegans or vegetarians to eat veggie dogs (which I don't even eat personally). I usually like to get the spinach lasagna (vegetarian but not vegan) or the spinach with brown lentils (vegan), which taste AMAZING! For example, today they are serving a nice three bean veggie chili for dinner (completely vegan) as well as a completely vegan mushroom stroganoff dish. I'd be surprised if any other campus dining entity in the entire nation serves more than one entirely vegan meal for dinner at their dining halls.
Also, I'm surprised that you mention that they rarely serve tofu because they usually have at least 2-3 tofu entrees a week, in fact I eat tofu very often. Tonight they are even serving a tofu dish (Tofu Barley Cous Cous), so it's ironic that you claim they rarely serve tofu just as they are serving tofu! Do you even actually go to the dining halls? They have tofu all the time...
And for the record, the tofu stir fry at Zen Blossom is amazing! The tofu is always pretty crispy and delicious and the veggies are great.
It seems like either you've never actually eaten on campus before or you just had one really bad experience, because I'm very pleased by the campuses vegetarian options. Certainly there are fewer vegan options than would be perfect, but there are many more compared to any average restaurant. I mean, not even McDonalds fries are vegan, but University Dining offers multiple vegan dishes daily, so what's to complain about?
