So is UNL a huge party school like everyone here in Omaha says it is?

Kind of... If you want to party, there are plenty to choose from, but UNL has a lot of other activities on campus that you can participate in or go to if partying isn't your scene. You'll get a lot of emails about campus events, so if you take the time to read them, you'll find plenty of things to keep you involved.
