Despite Utah having a reputation as still living in the Prohibition Era, there are many places for locals to get an alcoholic beverage. The laws have just recently changed to allow anyone 21-and-up to enter a bar without having to pay a membership fee. Most bars tend to be full service, and the beverages are usually fairly priced. Overall, there are a few good nightclubs in Salt Lake City, but don't expect to be blown away by anything amazing. The club scene is growing in Salt Lake, but slowly. Most people you meet there are older and just want a place to get a drink. However, there are clubs that cater to all sorts of dancing styles. There is even a "dry" club to appeal to the underage/Mormon scene.
Most of the students, or those that are underage, like to go to someone's house and chill or party there as opposed to going to a club. Needless to say, there is never a shortage of house parties to attend, which serve as a great way to get to know people and have a good time. The U of U also does a good job of promoting different activities and events that go on around campus. There are usually a lot of events that revolve around football, basketball, and winter sports. You just need to keep an eye out.
