Wesleyan's main eatery is Usdan, which offers a wide array of food including classics (usually some kind of meat-and-potatoes offering with veggies), stir-fry, pizza, "pastabilities," cereal, make-your-own paninis, salads, and vegan and kosher stations (which are surprisingly delicious). If you're not into mainstream dining, the alternative dining hall is called Summerfields, and it's located across campus near the Butterfield dorms. Summerfields has a menu that you order off of—rather than a buffet—and is the place to go for greasy treats and, as of this year, Mexican food! Depending on your hometown's proximity to Mexico, "taqueria" at Summerfields may or may not meet your standards.
In addition to dining halls, the University has Wes Wings (for chicken tenders, burgers, salads, pita, and hummus, or really bomb mac and cheese), WesShop (overpriced but handy mini-grocery store on campus), Pi Café (daytime coffee, baked goods, sandwiches, and salads), the Usdan Café (coffee, sandwiches, and sushi), as well as Star and Crescent, the restaurant inside Alpha Delta, which is usually pretty tasty but hard to get a seat at because it's so small (first three freshmen at dinner eat free, though, which is cool). Students can also cook for themselves if they have a nice kitchen, but that probably doesn't happen until sophomore or junior years, as freshman dorm kitchens tend to be cramped and/or gross.

They Try!
First, I must say that Wesleyan students are very picky about their food. With very active student groups like WesFresh, which promotes better food options on campus, and many vegetarians, vegans, pescatarians, kosher and other people with specific food preferences, campus dining has a lot to accomodate. That said, I think they do a pretty good job.
The vegetarian section I actually love because they try out many dishes with healthy ingredients like beets, tofu, seaweed, couscous, etc. Many non-vegetarians really utilize this section.
They also have lots of typical cafeteria food, and daily specials like quesadillas and philly cheese steak. Desert is delicious and very dangerous for the Freshmen 15.
My only complaint would be that they don't prepare enough dishes with fish and that they don't serve asian food like Thai, Vietnamese or even decent Chinese food.
Overall, Wesleyan campus dining serves a real variety of food and try their best! (Also you can always request specific dishes/give feedback through the bulletin board and feedback sheets)

Tasty as Hell
The campus dining is actually really good. My favorite is the vegan options that they have at Usdan every day. While the food can get repetitive, it really depends on how lazy you are to walk to the other dining hall.

Generally good food and good variety -- with occasional poor days. Wesleyan being Wesleyan, the cafeteria makes a strong effort to incorporate locally-sourced and organic ingredients. They also make it very easy to eat healthy, which for me is a plus.
